Here’s a simple recipe for Bolo de Bolacha, a Portuguese no-bake biscuit cake:
Ingredients:
- 1 package of Maria biscuits (about 200-250 grams)
- 1 cup of strong coffee (cooled)
- 1 cup of unsalted butter (softened)
- 1 cup of granulated sugar
- 2 large egg yolks
- 1 teaspoon of vanilla extract
- Cocoa powder for dusting (optional)
- Chocolate sprinkles (optional)
Instructions:
- Prepare the Coffee:
- Brew a strong cup of coffee and let it cool.
- Make the Cream:
- In a large bowl, beat the softened butter and sugar together until light and fluffy.
- Add the egg yolks one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Assemble the Cake:
- Quickly dip each Maria biscuit in the cooled coffee, making sure not to soak them too long.
- Arrange a layer of dipped biscuits in the bottom of a serving dish or cake pan.
- Spread a layer of the cream mixture over the biscuits.
- Continue layering biscuits and cream, ending with a cream layer on top.
- Chill:
- Cover the dish and refrigerate for at least 4 hours or overnight to let the flavors meld and the cake set.
- Serve:
- Before serving, dust the top with cocoa powder and sprinkle with chocolate sprinkles if desired.
