Here’s a simple recipe for Bolo de Bolacha, a Portuguese no-bake biscuit cake:

Ingredients:

  • 1 package of Maria biscuits (about 200-250 grams)
  • 1 cup of strong coffee (cooled)
  • 1 cup of unsalted butter (softened)
  • 1 cup of granulated sugar
  • 2 large egg yolks
  • 1 teaspoon of vanilla extract
  • Cocoa powder for dusting (optional)
  • Chocolate sprinkles (optional)

Instructions:

  1. Prepare the Coffee:
    • Brew a strong cup of coffee and let it cool.
  2. Make the Cream:
    • In a large bowl, beat the softened butter and sugar together until light and fluffy.
    • Add the egg yolks one at a time, mixing well after each addition.
    • Stir in the vanilla extract.
  3. Assemble the Cake:
    • Quickly dip each Maria biscuit in the cooled coffee, making sure not to soak them too long.
    • Arrange a layer of dipped biscuits in the bottom of a serving dish or cake pan.
    • Spread a layer of the cream mixture over the biscuits.
    • Continue layering biscuits and cream, ending with a cream layer on top.
  4. Chill:
    • Cover the dish and refrigerate for at least 4 hours or overnight to let the flavors meld and the cake set.
  5. Serve:
    • Before serving, dust the top with cocoa powder and sprinkle with chocolate sprinkles if desired.
