Briouats of almond

Briouats are delicious Moroccan pastries filled with a sweet almond mixture, then fried or baked. Here’s a basic recipe for making them:

Ingredients:

For the Almond Filling:

  • 1 cup (100g) ground almonds
  • 1/2 cup (100g) granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons melted butter
  • 1 tablespoon orange blossom water (optional)
  • 1 egg white (for binding)

For Assembly:

  • 12 sheets of phyllo dough (thawed if frozen)
  • Melted butter (for brushing)
  • Honey (for drizzling)
  • Powdered sugar (optional, for dusting)

Instructions:

  1. Prepare the Almond Filling:
    • In a bowl, mix the ground almonds, sugar, and cinnamon.
    • Add the melted butter and orange blossom water, mixing until well combined.
    • Stir in the egg white to help bind the mixture.
  2. Assemble the Briouats:
    • Preheat your oven to 375°F (190°C) if baking.
    • Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush with butter again.
    • Cut the stacked phyllo into long strips, about 2 inches wide.
    • Place a small spoonful of the almond filling at one end of each strip.
    • Fold the phyllo over the filling diagonally to form a triangle shape. Continue folding in a triangle pattern until you reach the end of the strip.
    • Brush the final edge with butter to seal the briouat.
  3. Cooking:
    • For Baking: Place the briouats on a baking sheet lined with parchment paper. Brush the tops with melted butter. Bake for about 15-20 minutes, or until golden brown and crisp.
    • For Frying: Heat oil in a pan over medium heat. Fry the briouats in batches, turning them until they are golden brown and crispy.
  4. Finish:
    • If desired, drizzle warm briouats with honey and dust with powdered sugar before serving.
