Briouats of almond
Briouats are delicious Moroccan pastries filled with a sweet almond mixture, then fried or baked. Here’s a basic recipe for making them:
Ingredients:
For the Almond Filling:
- 1 cup (100g) ground almonds
- 1/2 cup (100g) granulated sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons melted butter
- 1 tablespoon orange blossom water (optional)
- 1 egg white (for binding)
For Assembly:
- 12 sheets of phyllo dough (thawed if frozen)
- Melted butter (for brushing)
- Honey (for drizzling)
- Powdered sugar (optional, for dusting)
Instructions:
- Prepare the Almond Filling:
- In a bowl, mix the ground almonds, sugar, and cinnamon.
- Add the melted butter and orange blossom water, mixing until well combined.
- Stir in the egg white to help bind the mixture.
- Assemble the Briouats:
- Preheat your oven to 375°F (190°C) if baking.
- Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush with butter again.
- Cut the stacked phyllo into long strips, about 2 inches wide.
- Place a small spoonful of the almond filling at one end of each strip.
- Fold the phyllo over the filling diagonally to form a triangle shape. Continue folding in a triangle pattern until you reach the end of the strip.
- Brush the final edge with butter to seal the briouat.
- Cooking:
- For Baking: Place the briouats on a baking sheet lined with parchment paper. Brush the tops with melted butter. Bake for about 15-20 minutes, or until golden brown and crisp.
- For Frying: Heat oil in a pan over medium heat. Fry the briouats in batches, turning them until they are golden brown and crispy.
- Finish:
- If desired, drizzle warm briouats with honey and dust with powdered sugar before serving.
