Fios de ovos

Fios de ovos

Fios de ovos, or “egg threads,” are a traditional Portuguese confection made from egg yolks and sugar. Here’s a basic recipe for you:

Ingredients:

  • 6 egg yolks
  • 1 cup sugar
  • 1 cup water
  • A few drops of lemon juice

Instructions:

  1. Prepare the Syrup:
    • In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
    • Once it boils, reduce the heat and let it simmer for about 5 minutes, or until it thickens slightly. You want a thin syrup consistency.
  2. Prepare the Egg Yolks:
    • In a separate bowl, lightly beat the egg yolks.
  3. Cook the Egg Yolks:
    • Slowly drizzle a small amount of the hot syrup into the egg yolks while continuously stirring to temper them. This prevents the yolks from cooking too quickly.
    • Gradually add the rest of the syrup to the egg yolks, stirring constantly.
  4. Create the Fios:
    • Return the mixture to the saucepan and cook over low heat, stirring continuously. The mixture should start to thicken and form threads.
    • Continue stirring until the egg yolks are fully cooked and have a thick, thread-like consistency. This can take about 10-15 minutes.
  5. Cool and Serve:
    • Once thickened, remove from heat and let it cool. The fios de ovos will set further as they cool.
    • You can store them in an airtight container. They are often used as a topping for desserts or eaten on their own.

Enjoy your fios de ovos! They’re quite sweet and delicate.
