Fios de ovos, or “egg threads,” are a traditional Portuguese confection made from egg yolks and sugar. Here’s a basic recipe for you:
Ingredients:
- 6 egg yolks
- 1 cup sugar
- 1 cup water
- A few drops of lemon juice
Instructions:
- Prepare the Syrup:
- In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves.
- Once it boils, reduce the heat and let it simmer for about 5 minutes, or until it thickens slightly. You want a thin syrup consistency.
- Prepare the Egg Yolks:
- In a separate bowl, lightly beat the egg yolks.
- Cook the Egg Yolks:
- Slowly drizzle a small amount of the hot syrup into the egg yolks while continuously stirring to temper them. This prevents the yolks from cooking too quickly.
- Gradually add the rest of the syrup to the egg yolks, stirring constantly.
- Create the Fios:
- Return the mixture to the saucepan and cook over low heat, stirring continuously. The mixture should start to thicken and form threads.
- Continue stirring until the egg yolks are fully cooked and have a thick, thread-like consistency. This can take about 10-15 minutes.
- Cool and Serve:
- Once thickened, remove from heat and let it cool. The fios de ovos will set further as they cool.
- You can store them in an airtight container. They are often used as a topping for desserts or eaten on their own.
