Ghriba
Ghriba is a type of Moroccan cookie that’s often enjoyed with tea. There are many variations, but here’s a basic recipe for traditional Ghriba:
Ingredients:
- 1 cup (200g) granulated sugar
- 1 cup (200g) butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups (375g) all-purpose flour
- 1 teaspoon baking powder
- A pinch of salt
- 1 cup (100g) finely chopped nuts (almonds, walnuts, or pistachios) or desiccated coconut (optional)
- Powdered sugar for dusting (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Prepare Dough:
- In a large bowl, cream together the sugar and butter until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract and mix well.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you’re using nuts or coconut, fold them in at this stage.
- Shape Cookies:
- Scoop out small amounts of dough and roll them into balls, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- If desired, lightly flatten each ball with the back of a fork or your fingers.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers should still be soft.
- Cool:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Optional:
- Dust the cooled cookies with powdered sugar for an extra touch of sweetness.
