Ghriba

Ghriba is a type of Moroccan cookie that’s often enjoyed with tea. There are many variations, but here’s a basic recipe for traditional Ghriba:

Ingredients:

  • 1 cup (200g) granulated sugar
  • 1 cup (200g) butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 cup (100g) finely chopped nuts (almonds, walnuts, or pistachios) or desiccated coconut (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare Dough:
    • In a large bowl, cream together the sugar and butter until light and fluffy.
    • Beat in the eggs one at a time, then add the vanilla extract and mix well.
    • In a separate bowl, whisk together the flour, baking powder, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If you’re using nuts or coconut, fold them in at this stage.
  3. Shape Cookies:
    • Scoop out small amounts of dough and roll them into balls, about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about 2 inches apart.
    • If desired, lightly flatten each ball with the back of a fork or your fingers.
  4. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers should still be soft.
  5. Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. Optional:
    • Dust the cooled cookies with powdered sugar for an extra touch of sweetness.
