Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2-3 garlic cloves, minced
- 2-3 celery stalks, chopped
- 1 large zucchini, chopped
- 1 cup green beans, trimmed and chopped
- 1-2 cups spinach or kale (stems removed), chopped
- 1 cup parsley, chopped
- 1 cup fresh basil, chopped
- 6 cups vegetable or chicken broth
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: 1-2 cups peas or broccoli for added green flavor and texture
Instructions:
- Prepare the Vegetables:
- Wash and chop all the vegetables as needed.
- Sauté Aromatics:
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Cook the Vegetables:
- Add the chopped celery, zucchini, and green beans (and peas or broccoli if using) to the pot. Sauté for about 5 minutes, stirring occasionally.
- Pour in the vegetable or chicken broth and bring to a boil.
- Reduce the heat to a simmer and cook for about 15-20 minutes, or until the vegetables are tender.
- Add Greens and Herbs:
- Stir in the chopped spinach or kale, parsley, and basil.
- Simmer for an additional 5 minutes until the greens are wilted and tender.
- Season and Finish:
- Add the lemon juice and season with salt and pepper to taste.
- Taste and adjust seasoning if necessary.
- Blend (Optional):
- For a smoother texture, you can use an immersion blender to blend the soup directly in the pot, or carefully transfer the soup to a blender in batches and blend until smooth.
- Serve:
- Serve the green broth hot, garnished with additional fresh herbs or a drizzle of olive oil if desired.
Tips:
- Texture: If you prefer a chunkier broth, you can skip blending and leave the vegetables in larger pieces.
- Add-Ins: Feel free to add other green vegetables you have on hand, such as asparagus, leeks, or Swiss chard.
