Ingredients

For the caramel:

  • 1 can (14 oz) sweetened condensed milk

  • 1 tablespoon vanilla extract

Instructions

  1. Prepare the caramel:
    • In a medium saucepan, combine the sugar and water.
    • Cook over medium heat, without stirring, until the sugar dissolves and turns a deep amber color. This usually takes about 10-15 minutes.
    • Carefully pour the caramel into a 9-inch round cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.
  2. Make the custard:
    • Preheat your oven to 350°F (175°C).
    • In a large mixing bowl, whisk together the sweetened condensed milk, evaporated milk, eggs, and vanilla extract until smooth and well combined.
    • Pour the custard mixture over the cooled caramel in the pan.
  3. Bake the flan:
    • Place the pan in a larger baking dish or roasting pan. Fill the larger pan with hot water until it reaches halfway up the sides of the flan pan (this is called a water bath).
    • Bake in the preheated oven for 50-60 minutes, or until the flan is set and a knife inserted into the center comes out clean.
    • Remove from the oven and let it cool in the water bath. Refrigerate for at least 4 hours, or overnight.
  4. Serve:
    • To unmold, run a knife around the edges of the flan to loosen it.
    • Invert a serving plate over the pan, then carefully flip the pan to release the flan onto the plate. The caramel will flow over the flan.
