Rice pudding
Here’s a simple rice pudding recipe that’s creamy and delicious:
Ingredients:
- 1 cup Arborio rice (or any short-grain rice)
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 cup raisins or dried fruit (optional)
Instructions:
- Rinse the Rice: Rinse the rice under cold water until the water runs clear. This helps remove excess starch.
- Cook the Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the rice is tender.
- Prepare the Pudding: In a large saucepan, combine the milk, sugar, and remaining salt. Heat over medium heat until the mixture is warm but not boiling.
- Add Rice to Milk: Add the cooked rice to the milk mixture. Cook over low heat, stirring frequently, for about 20-25 minutes, or until the mixture thickens and the rice is very soft.
- Finish: Stir in the vanilla extract and ground cinnamon (if using). If you like, you can also add raisins or dried fruit at this stage.
- Serve: Remove from heat and let the pudding cool slightly. Serve warm or chilled, depending on your preference.
