Ingredients:
- 1kg (2.2 lbs) granulated sugar
- 100g (7 tablespoons) unsalted butter
- 1 can (397g or 14 oz) sweetened condensed milk
- 150ml (2/3 cup) whole milk
- 1 teaspoon vanilla extract (optional)
Instructions:
- Prepare Your Equipment:
- Grease a large baking tin (about 8×12 inches) or line it with parchment paper.
- Have a candy thermometer handy if you have one.
- Melt the Ingredients:
- In a large, heavy-bottomed pot, combine the sugar, butter, and whole milk.
- Heat the mixture over medium heat, stirring constantly until the sugar dissolves and the butter melts.
- Cook the Tablet:
- Once the sugar has dissolved, add the sweetened condensed milk to the pot.
- Bring the mixture to a boil, then reduce the heat to a simmer.
- Continue to cook, stirring constantly to prevent burning, until the mixture thickens and turns a golden caramel color. This should take about 20-30 minutes.
- The mixture should reach the “soft ball” stage (around 240°F or 115°C) if you’re using a candy thermometer. You can also test it by dropping a small amount of the mixture into a glass of cold water – it should form a soft ball that can be flattened between your fingers.
- Add Flavoring:
- Remove the pot from the heat and stir in the vanilla extract if using.
- Beat the Mixture:
- Off the heat, beat the mixture vigorously for a few minutes until it starts to thicken and become creamy. This step helps to achieve the tablet’s characteristic crumbly texture.
- Pour and Set:
- Pour the mixture into the prepared tin, spreading it out evenly with a spatula.
- Allow the tablet to cool and set at room temperature. This can take several hours.
- Cut and Serve:
- Once the tablet is fully set, cut it into small squares or rectangles.
- Store in an airtight container.
Tips:
- Stir Constantly: Stirring is crucial to prevent the mixture from sticking and burning. A wooden spoon works well for this.
- Test for Doneness: If you’re unsure if the mixture is ready, the soft ball stage is a reliable indicator.
