Toucinho do céu

Toucinho do céu

Toucinho do céu is a traditional Portuguese dessert known for its rich, sweet flavor. It’s often made with egg yolks, almonds, and sugar. Here’s a classic recipe for you to try:

Ingredients:

  • 8 egg yolks
  • 1 cup granulated sugar
  • 1 cup ground almonds (or almond meal)
  • 1/4 cup water
  • 1/4 teaspoon almond extract (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Mold:
    • Grease a 9-inch (23 cm) round cake pan or line it with parchment paper.
  3. Make the Syrup:
    • In a small saucepan, combine the granulated sugar and water.
    • Heat over medium heat until the sugar is completely dissolved and the mixture starts to simmer. Let it simmer for a couple of minutes, then remove from heat and let it cool slightly.
  4. Mix the Batter:
    • In a large bowl, whisk the egg yolks until they are well combined.
    • Gradually add the warm syrup to the egg yolks while whisking continuously.
    • Stir in the ground almonds and almond extract (if using).
  5. Bake the Cake:
    • Pour the batter into the prepared pan.
    • Bake in the preheated oven for about 30-35 minutes, or until the cake is set and lightly golden on top. A toothpick inserted into the center should come out clean.
  6. Cool and Serve:
    • Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    • Once cool, dust with powdered sugar if desired.

Enjoy your Toucinho do Céu! It pairs wonderfully with a cup of tea or coffee.
