Ingredients:
- 8 egg yolks
- 1 cup granulated sugar
- 1 cup ground almonds (or almond meal)
- 1/4 cup water
- 1/4 teaspoon almond extract (optional)
- Powdered sugar for dusting (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Prepare the Mold:
- Grease a 9-inch (23 cm) round cake pan or line it with parchment paper.
- Make the Syrup:
- In a small saucepan, combine the granulated sugar and water.
- Heat over medium heat until the sugar is completely dissolved and the mixture starts to simmer. Let it simmer for a couple of minutes, then remove from heat and let it cool slightly.
- Mix the Batter:
- In a large bowl, whisk the egg yolks until they are well combined.
- Gradually add the warm syrup to the egg yolks while whisking continuously.
- Stir in the ground almonds and almond extract (if using).
- Bake the Cake:
- Pour the batter into the prepared pan.
- Bake in the preheated oven for about 30-35 minutes, or until the cake is set and lightly golden on top. A toothpick inserted into the center should come out clean.
- Cool and Serve:
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
